Gateau aux fraise coréen

Hello les gourmands,

Vous connaissez mon amour pour la fraise. En ce moment ma passion est découvrir de nouveaux compte Instagram de pâtisserie coréen, ils sont à fond dans les desserts à base de fraise ( mon bonheur). Ils sont spécialisés dans la revisite du gâteau aux fraises version française ( de loin mon gâteau préféré). 

Il y'a une revisite que je vois sur tous les comptes et j'ai trouvé une vidéo youtube de la recette de boone_bake ( vidéo ci-dessous) . Je suis happy, il faut absolument que je fasse la recette pour mon anniversaire, quel défi!!! 😃.

Gâteau aux Fraises coréen

Ingrédients

(Moule à gâteau de 18 cm * 18 cm * 7 cm. moule de montage 16 cm. Carré.)

Vanilla Jenuwazu (génoise)

  • 310 g d'oeufs (5-6 pièces)
  • 150 g de sucre
  • 38 g de miel
  • 60 g de lait
  • 187g Farine à gâteau
  • 60g de beurre sans sel 
  • 2 g de sel
  • Extrait de vanille 7,5 ml (1 / 2TSP)

Ganache montée au chocolat blanc

  • 120 g de chocolat blanc
  • 120g de crème épaisse chaude
  • 400g de crème fraîche froide
  • 20g de lait concentré
  • 35 g de sucre
  • 5 g Kirsch  (facultatif)

* Sirop

  • 20 g de sucre
  • 30 g d'eau
  • kirsch 2.5g (1 / 2tsp) 

Le kirsch est une eau-de-vie obtenue par simple ou double distillation de cerises fermentées, pulpes, jus et noyaux. Il titre entre 40 et 60° d'alcool.

Comment faire le sirop

Peser l'eau et le sucre Faites fondre le sucre au micro-ondes. Ajouter le kirsch et mélanger.

A préparer avant de commencer

1. Préparez tous les ingrédients à température ambiante.

2. Tamisez la farine.

3. Préparez du lait chaud et du beurre.

4. Placez le papier sulfurisé sur le moule.

5. Préchauffez le four à 175 degrés.

Conseils

  • Vous pouvez remplacer la ganache montée au chocolat blanc par de la crème fouettée.
