Recette facile du number cake sapin de Noël avec Patron
Je vous propose ma recette pour faire le number cake en forme de sapin de Noël parfait pour le réveillon ou pour le nouvel an.
Une recette simple à faire , incroyablement délicieuse qui va impressionner vos convives.
Je vous donne ma base pour réaliser un number cake après à vous de l'adapter selon vos goûts.
C'est une recette que je vous conseille de la faire la veille pour le lendemain et à conserver au réfrigérateur bien recouvert car la crème mascarpone s'imprègne facilement des odeurs du réfrigérateur.
Procédant ainsi ,je trouve la crème mascarpone se bonifie, elle humidifie le biscuit donc on obtient biscuit à la fois moelleux et croquant et facilite la découpe.
C'est partit!!!!!!
Pour la pâte sablée :
Environ pour un chiffre de 20 cm de 2 étages
Pour une tarte de 20 cm
- 150 g de beurre mou (à sortir du réfrigérateur 1h à l’avance)
- 250 g de farine
- 90 g de sucre glace
- 40 g de poudre d’amande, de noisettes selon vos goûts ( j'en met rarement)
- 1 œuf battu
- 1 pincée de sel
ÉTAPES RECETTE DE LA PÂTE SABLÉE
- Tamisez séparément la farine et le sucre glace
- Mélangez dans un grand saladier le beurre mou, le sucre glace, le sucre vanillé, le sel, l’œuf battu, les poudres d’amandes et de noisettes .
- Ajoutez la farine tamisée et travaillez la pâte avec vos doigts jusqu’à obtenir une pâte lisse et homogène.
- Formez une boules de pâte, enveloppez les dans du film alimentaire et placez les au réfrigérateur pendant minimum 1h.
- Préchauffez votre four à 180°.
- Étalez la boule selon l'épaisseur qui vous convient sur un plan de travail fariné.
- découper vos chiffres pour vos numbers cakes ou disposer la pâte dans le moule à tarte.
- Remettez le sablés au réfrigérateur 15 minutes pour que la pâte durcisse encore.
- Enfournez les pour 15 – 20 minutes à chaleur tournante.
Mes conseils pour réussir votre number cake:
- Vous pouvez réaliser la pâte la veille ou deux jours avant.
- Moi j'utilise un robot pour la réaliser mais peut être réaliser à la main sans problème.
- Farinez bien votre rouleau de pâtisserie
- Pour un number cake , j'étale la pâte avec une épaisseur de 3 mm.
- Laissez bien votre pâte repose au frigo minimum pour qu'elle se solidifie et permettra un un étalage plus facile.
- Une fois vos sablés prêts, laissez la refroidir
- Il est possible de faire vos number cakes avec une pâte feuilleté ou avec une base gâteau.
Pour garnir mes number cakes, j'utilise la crème mascarpone chantilly et c'est juste un délice, la mascarpone chantilly est une crème légère apporte un bon équilibre , elle combine parfaitement avec la pâte sablée.
Recette crème mascarpone chantilly
Pouvez-vous garnir avec une ganache simple ou montée au chocolat par exemple, c'est tout au si bon.
Ingrédients:
-250 g de mascarpone
-320 g de crème liquide entière (30% de matières grasses)
-6 cuillères à soupe de sucre glace
-3 pointes de cuillères de grains de vanille (vous pouvez aromatiser votre crème mais attention si vous rajoutez un arôme liquide) faculatif.
- Dans un saladier, mettez la mascarpone et 1/4 de la crème (faîtes le au jugé ne vous embêtez pas). Mélangez les un peu avec une spatule pour que la mascarpone se détende.
- Rajoutez le reste de crème et fouettez la préparation à vitesse rapide. Fiez vous à la consistance de votre préparation, il faut qu’elle monte, qu’elle ne soit plus liquide et qu’elle ait la texture d’une crème
- Une fois que la crème commence à monter, ajoutez le sucre glace et la vanille et continuez à battre.
- En tout il faut battre la crème au moins 6 minutes pour obtenir une belle consistance qui tiendra lors du pochage et qui supportera le poids du biscuit sablé du dessus ! Faites le test du bec d’oiseau : il faut que quand vous souleviez votre fouet ou votre batteur la crème reste dessus, ne coule pas et forme un bec d’oiseau.
- Une fois la crème montée en chantilly, mettez la en poche avec une douille ronde lisse (si vous n’en avez pas, ce n’est pas grave, pour un pochage rond comme ça, sans douille ça fonctionne aussi) et si vous ne l’utilisez pas tout de suite gardez la au frais. Attention : Je vous conseille de l’utiliser tout de suite pour qu’elle ne retombe pas et qu’elle garde sa belle texture lisse. C’est pourquoi je vous conseille de la préparer en dernière.
Mon conseil:
- Vous pouvez aussi placer directement votre bol et les fouets au congélateur, 20 à 30 min.
- Attention de ne pas trop fouetter la crème, elle risquerait de tourner et de se transformer en beurre.
- Laissez votre crème mascarpone chantilly au réfrigérateur jusqu’au service.
MONTAGE DU NUMBER CAKE
- Positionnez les deux sablés qui représentent la base du gâteau sur votre plat ou planche
- Pochez dessus des ronds de crème chantilly mascarpone. Pour qu’ils soient jolis, tenez votre poche droite au dessus du sablé à environ 1 cm pour qu’ils ne s’écrasent pas.
- Une fois le pochage de la mascarpone chantilly terminé, pochez des petits points de ganache entre chaque points de crème chantilly. En fait, comblez les petits trous
- Positionnez un des sablés du dessus et recommencez le même pochage, puis celui de la ganache
- Recommencez avec le second chiffre du dessus
- Une fois le pochage terminé, laissez-vous guider par votre imagination pour décorer votre number cake. Moi je les décorer souvent avec des fruits par exemple avec des fruits rouges et un coulis de framboise que je place sur le sablé du bas cela rajoute un touche de fraicheur et c'est tellement bon. il existe une multitudes de combinaison pour décorer un number cake.
