Aujourd'hui, je vais enfin vous partager la recette du cake citron avec crème mascarpone.
Je suis une grande fan de cake au citron donc je voulais tester la recette du gâteau au yaourt que j'affectionne particulière mais une touche citronnée.
Toujours une recette simple et rapide à faire.
Encore un gâteau validé par les enfants, je suis trop fière quand ma fille me dit maman c'est trop bon.
Recette cake au citron avec crème mascarpone
Astuces:
- Laissez bien refroidir votre gâteau avant de recouvrir le dessus de votre gâteau avec la crème mascarpone
- Laissez votre gâteau refroidir hors du réfrigérateur , je trouve que le réfrigérateur modifie la texture du gâteau qui est moins moelleux à sa sortie du réfrigérateur.
- Mettez votre bol et le fouet pour la crème mascarpone au frais avant son utilisation cela va permettre à la crème de monter plus facilement et rapidement.
Cake au citron
Moule de 25 cmIngrédients :
- 1 yaourt naturel de 125 gr
- Le zeste d'un citron
- 65 gr d’huile de tournesol
- 185 gr de sucre
- 375 gr de farine
- 2 œufs
- 11 gr de levure chimique
Préparation :
- Préchauffer le four à 180ºC.
- Battre les œufs avec le sucre après nous ajoutons le yaourt, l’huile et le zeste de citron. Mélanger.
- Ajouter la farine et la levure. Vous pouvez l’ajouter telle quelle ou, mieux, en tamisant le mélange pour éviter les grumeaux. On mélange juste assez pour avoir un mélange homogène et sans grumeaux et la pâte prête !
- Nous passons la pâte dans un moule de 18 cm bien beurré et saupoudré de farine pour mieux la démouler.
- Cuire au four pendant 30-35 minutes à 180ºC, ou jusqu’à ce que nous voyons que la pointe d’un couteau sort propre en piquant au centre du gâteau. Démouler et laisser refroidir au moins 1h.
Crème mascarpone
Ingrédients:
- 100 g de mascarpone
- 160 g de crème liquide entière (30% de matières grasses)
- 3 cuillères à soupe de sucre glace
- Vous pouvez aromatiser
Instructions:
- Dans un saladier, mettez la mascarpone et 1/4 de la crème (faîtes le au jugé ne vous embêtez pas). Mélangez les un peu avec une spatule pour que la mascarpone se détende.
- Rajoutez le reste de crème et fouettez la préparation à vitesse rapide. Fiez vous à la consistance de votre préparation, il faut qu’elle monte, qu’elle ne soit plus liquide et qu’elle ait la texture d’une crème
- Une fois que la crème commence à monter, ajoutez le sucre glace et la vanille (optionnelle) et continuez à battre.
- En tout il faut battre la crème au moins 6-7 minutes pour obtenir une belle consistance qui tiendra lors du pochage et qui supportera le poids du biscuit sablé du dessus ! Faites le test du bec d’oiseau : il faut que quand vous souleviez votre fouet ou votre batteur la crème reste dessus, ne coule pas et forme un bec d’oiseau.
- Une fois la crème montée en chantilly, mettez la en poche avec une douille ronde lisse ou de votre choix (si vous n’en avez pas, ce n’est pas grave, pour un pochage rond sans douille ça fonctionne aussi) pour recouvrir le dessus de votre gâteau et si vous ne l’utilisez pas tout de suite gardez la au frais. Attention : Je vous conseille de l’utiliser tout de suite pour qu’elle ne retombe pas et qu’elle garde sa belle texture lisse. C’est pourquoi je vous conseille de la préparer en dernière.
- Pouvez décorer votre gâteau avec des morceaux de citrons ou de fraises comme moi.
